These pancakes were so easy and delicious, you guys!
I will say it was pretty rewarding getting to use my made from scratch almond meal here :)

For these pancakes, I used
Whisk together the eggs, almond meal, vanilla extract and water. Some people like thicker batter, others thinner, so you can add water accordingly. I like making these itty bitty cute pancakes, because, what’s better than cute food?! Okay, a lot of things, but still.
Pour onto a buttered griddle and wait until they firm up. These don’t bubble like normal pancakes, they just sort of “harden,” a little bit. Trust me, they’re still good. I know that’s not the most appetizing adjective ;)
Then serve with fresh fruit…there’s not much more to it!
